Strawberry Beet Pink Smoothie

If you want to feel like you’re eating something from Willy Wonka’s chocolate factory, but way healthier, this fuchsia smoothie is for you. It’s earthy, sweet, and hits the back of your throat with a bit of citrus.

It’s a perfect way to break up your green smoothie train both with flavor and color. The show stopping hue practically screams “ANTIOXIDANTS TO THE RESCUE!” as you drink up, reinforcing the idea that you should eat a rainbow everyday to stay healthy. Plus, this jewel-toned pink is luxurious to look at while you sip away.

This dairy-free smoothie can easily be made vegan—just switch the collagen peptides for unflavored pea protein. Or, you can just leave out the protein.


TIPS FOR HOW TO MAKE A SMOOTHIE

  • Don’t use ice—it dilutes the flavor.

  • If you can help it, use frozen fruit and keep the veggies and liquids you’ll use for smoothies in the fridge or freezer.

  • Don’t skimp on your liquid. Add more liquid to your blender if your smoothie isn’t blending well. 

  • Smoothies are an excellent way to use avocados that are starting to age—once they are ripe on your countertop, pop them into your fridge to slow the aging process. As a bonus, they’ll be cold and ready for the blender! 

  • Don’t be afraid to play around with ratios to suit your taste! Want it sweeter? Add more fruit or swap avocado for banana. Want it thicker? Use less liquid. Creamier? Add more avocado. You get the idea.

  • These recipes make one large smoothie (meal replacement) or 2 snack- or kid-sized smoothies.


Strawberry Beet Pink Smoothie

INGREDIENTS

  • 1/4 large avocado, refrigerated

  • 1 cup fresh beets, refrigerated

  • 1 cup frozen strawberries

  • ½-¾ cup orange juice

  • 2 scoops collagen peptides

DIRECTIONS

To ensure a smooth blend without overheating your blender, place your ingredients in the container, building from softest to hardest. For example, the bottom layer should be avocado and liquid, then greens and protein powder, and finally frozen fruit.

Start blender on a low setting to get all ingredients chopped for 10-20 seconds and then increase to a high speed until completely smooth, about 45-60 seconds, depending on your blender. Pour into a glass and enjoy immediately.
